Rohini Dey is owner of Indian-Latin restaurant Vermilion and is a former economist and management consultant. Dey spoke about joining Choose Chicago as a partner and how the industry network has benefited her business.
How would you describe your position with Vermilion? What do you do?
Vermilion is an Indian-Latin restaurant that I founded and own. While I started it in Chicago which is home for me, I also opened Vermilion in New York City six years back exporting a little bit of Chicago to the Big Apple!
What are your current projects?
I run Vermilion restaurants across both New York and Chicago and am deeply involved in their evolution. We recently relaunched both restaurants and this was captured in a CNBC restaurant reality docuseries "Consumed." I'm active in the restaurant industry - I worked with the Illinois Restaurant Association closely (I am on their Advisory Council) across the years to showcase Chicago's culinary riches (programming, dinners, Taste of Chicago, Chicago Gourmet, workshops for potential investors in Chicago).
I've worked actively with the National Restaurant Association every year at their annual convention hosted in Chicago and am a Trustee of the James Beard Foundation. Given my prior background (McKinsey, The World Bank), I also write on being entrepreneurial and on being a restaurateur (op-eds for Crain's, HuffPo, Chicago Sun Times, and for McKinsey) and continue working with Business Schools.
What are some of the goals of your organization?
My goals are twofold: I'm a zealot about Indian cuisine and breaking it out of the "curry in a hurry" mold it's been boxed in for decades in the U.S. As an avid world traveler who sees how cuisines all over are transforming with global influences and the explosion of the restaurant industry, I enjoy bringing Vermilion's unique Indian-Latin blend to our guests.
As a woman, I'm also committed to promoting women in the culinary industry and have founded the Women in Culinary Leadership (WICL) program with the James Beard Foundation to actively do so. Four of our eight 2015 WICL mentors who are training and sponsoring women in their restaurants this year are Chicago-based, so it's wonderful to see Chicago help us lead the charge on this.
How has your relationship with Choose Chicago benefited your business directly?
As an entrepreneur across both New York and Chicago, I have a lens on how vital it is to have allies that actively market your city and boost business and traffic. Massive events and conventions and tourism impacts my industry very directly. Being a culinary destination is a huge tourism and traffic draw, so it's a deeply symbiotic relationship with Choose Chicago and restaurants.
This year in particular, as a James Beard Foundation Trustee, it was a privilege and fun for me to work with Choose Chicago to bring the legendary James Beard Awards to Chicago for the first time in their 25-year history putting Chicago squarely and visibly on the national platform. Choose Chicago has also been amazing at putting out our news on their social media platforms to help us market ourselves and I see them do this across the board.
What would you say to a business owner or organization that is considering joining Choose Chicago?
There's no question that we have to back the organization that backs us. I also think as business owners we can reach out directly to Choose Chicago to get more involved and be a deeper part of the fabric of our own city. Why did you join? What were your expectations?
Initially it was to be listed in the directory and participate in Chicago Restaurant Week, but now it's evolved to a much deeper relationship. I see how vested the entire Choose Chicago team is in taking our city to new strides, I see the statistics and results, I've attended the annual meeting celebration, I've seen some of the fabulous milestones (NFL Draft, James Beard Foundation, etc.).
In the last few years Choose Chicago has worked with the City amazingly and the results are very tangible. I see a new vitality and optimism.
