At Manchamanteles, we honor the depth and discipline of Mexican cuisine through fire, memory, and modern refinement.

Manchamanteles (mahn-chah-mahn-TEH-les), meaning tablecloth stainer, reflects the richness at the heart of our traditionlayered, complex, and built on contrast: sweet and savory, smoke and spice, history and evolution.

Inspired by the culinary traditions of Mexicos 32 states, our kitchen, led by Chef Generoso Geno Bahena, brings regional ingredients and ancestral techniques into a contemporary expression.

Cocina de humo is central to our cooking. Mesquite, oak, and the Aztec grill shape the character of meats, vegetables, handmade corn tortillas, and seasonal ingredients.

Mole is at the heart of our table. Our collection of five moles explores the breadth of this ancient tradition, including a nut-free mole that allows more guests to experience its depth and complexity. Vegetarian, vegan, and gluten-free options reflect the abundance and versatility of Mexican cuisine.

Rooted in Mexico. Shaped by fire. Guided by time.
