• James Beard raised the level of excellence in culinary writing during his illustrious career opening the door for many modern, well-known cookbook authors to create the works that have inspired so many chefs today to create unique, inventive dishes. The Sunda Donburi features several favorite ingredients from culinary writers of today who have been influenced by James Beard during their careers. The dish is based on a traditional Japanese rice bowl and includes fresh tuna belly, uni and salmon roe, served with rice crisps, ponzu and nori.
