Baderbräu
  • Baderbräu operates a brewery, taproom and kitchen in the South Loop just steps from McCormick Place. Located at 2515 South Wabash, the facility features a 4,000 square foot taproom, plus retail space. The brewery has an art gallery that seats 50 people, which is perfect for smaller private events. The brewery can also host larger events such as weddings or corporate functions on its 5,000 sqft brewery floor. Baderbäu specialized in crushable, lager craft beers. Its flagship pilsener is a classic Chicago brew, revived from the early days of the craft movement. Baderbräu also brews a triple decocted Munich Style Helles called South Side pride, which was giving an "Outstanding" rating by Beer Advocate magazine, and a Hefeweizen rounds out its year round offerings. The taproom regularly has ten beers on tap including those already mentioned, and taps a firkin every Friday. The brewery features a 20HL mash filter system, the first of its kind in the Chicagoland area. The kitchen features updated German-style pub food, including a house-made bratwurst, house cured corned beef ruben, and an already legendary mac & cheese waffle. Come on by and check it out. The building is only a ten-minute walk from the Green Line stop at Cermak and is conveniently located near McCormick Place. Baderbräu was revived in 2012 by Rob Sama, an avid homebrewer, who brought back the original Chicago Pilsner popular in the 1990’s and has since created seasonal varietals like Red Velvet, Oktoberfest, Lawnmower Lager and Naked Selfie, a black IPL.
