Located in the former L20 space, Intro is Chicago's newest restaurant concept that's unlike anything else in the city. Every 2-3 months, a guest chef-in-residence is rotated in to work in full collaboration with Lettuce Entertain You founder Rich Melman and senior partners, creating a different concept reflective of their personal style.
The chefs are given full creative license to alter the space to their liking, from the menu to the music and right down to the vibe and style of service. Intro's goals are to introduce the city of Chicago to the culinary world's brightest talent, as well as offering chefs a balanced way of running a business - all while crafting some delicious tasting menus for diners.
This month, "Top Chef" alum CJ Jacobson has chef-in-residence honors to kick off Intro's opening. Jacobson, executive chef at Girasol restaurant in Studio City, California, has starred on two seasons of "Top Chef" and most recently won "Top Chef Duels" earlier this year.
His five-course menu is a delectable, refined rustic spread:
First course: Fluke, Avocado, Radish, Douglas Fir
Second course: Potato, Seaweed, Chicken Skin, Mugwort
Third course: Oxtail Tea, Rutabaga "Ramen," Aronia Berries
Fourth course: Lobster, Black Trumpet, Snap Pea, Cumin
Fifth course: Kombucha, Juniper Snow, Chocolate, Sunflower
