On a quiet corner of Belle Plaine Avenue in Chicago's North Center neighborhood, beside the Metra tracks, wild, Chicago-born yeast blows in through the third floor window of the acclaimed Dovetail Brewery, magically turning water into some of the best Lambic-style beers in Chicago and beyond.

Cofounders Hagen Dost and Bill Wesselink, both from Chicago, met at beer school in Munich: today, the microbrewery's sublime golden, German-style Lager, Bavarian-style Hefeweizen, Franconian-style Rauchbier and warm, malty Vienna-style Lager are brewed with the same exacting, traditional methods that produce the kind of beers found in small, family-run breweries in Europe.

You can stop by the brewery any Saturday for a tour, or plan a trip this spring for the following events:

CRAFT MARKET: This coming Saturday, Dovetail will play host to a craft market featuring local artisans selling everything from handcrafted soaps to jewelry: enjoy Dovetail's deliciously refreshing beers while shopping with Mom. (May 13, 1–5 p.m.—Just in Time for Mother's Day!)

MAYFESTIVERSARY: Mayfestiversary is a craft-beer lover's dream of a friendly block party. In celebration of 365 days of delicious Dovetail beers, Belle Plaine Avenue will be closed from Ravenswood to the CTA tracks for food trucks, bands, games and picnic tables. Dovetail will be serving their beer-including their first ever Maibock—from an outside dock and in the tap room. (May 27 & 28)

DOVETAIL BEER RUN: Running races are all the better when you know beer will greet you at the finish line! This June, Dovetail is partnering with the Illinois Brewery Running Series to offer a 5k-ish course that starts and ends at Dovetail. The Brewery Running Series is all about being active, having fun and giving back to the local community. Since their inaugural event in 2012, they have been able to donate over $40,000 back to local nonprofit organizations. This event will add to that tally! 10% of all proceeds go directly to the Chicago Parks Foundation, a local organization that helps fund and execute projects for the Chicago parks system. In addition to beer and swag, there will be cool merchandise for sale, live music, food trucks and plenty more beer to keep the party going after the finish line. Go behind the scenes and see how beer bubbles to life with a brewery tour. You'll taste the malt, feel the hops run through your fingers, see everything from a 120+ year old copper mash from the 1000 year-old Weihenstephan pilot brewery in Germany to a magnicent, custom-built koelschip, and sample three beers as you wander through the 22,000 square foot facility. If you're lucky, a proud Dost will be your guide. ($15)
