Ice Cream Sandwiches

With August being the dog days of summer and National Sandwich Month, it seems apropos to spend the entire month gorging on ice cream sandwiches. Two birds, one sumptuous stone. Conveniently, Chicago is full of innovative ice cream sandwiches this season, from reinvented classics to outside-the-box creations made with doughnuts, taco shells, and cupcakes.

The Gladwell Company (various locations)

The Gladwell Company is a new ice cream cart roving the streets of Chicago to fill the sweet Americana void in all our lives. Proprietor Nate Lynch stocks his cart with modern versions of classic ice cream treats (see picture above), from neo-dreamsicles and fudge pops to the quintessential ice cream sandwich, here dubbed the Wonderwich. Made with two chewy chocolate cookies and a scoop of chocolate chip ice cream, it's not a reinvention of the wheel, but an improvement.

Firecakes (68 W. Hubbard St.)

Doughnut ice cream sandwiches, anyone? This gluttonous masterpiece is the handiwork of Firecakes, ravaging beach bodies by stuffing two honey-glazed doughnuts with housemade ice cream. Guests select either vanilla or espresso ice cream, the latter of which makes for the perfect play on coffee and doughnuts. And if that wasn't enough to send you swirling into a cooling sugar coma, the sandwiches come with optional toppings, such as caramel, chocolate sauce, and cocoa nibs.

State and Lake Chicago Tavern (201 N. State St.)

Make your way to State and Lake Chicago Tavern for an all-out ice cream sandwich spree. Pastry chef Toni Roberts curates a variety of selections, including a snickerdoodle sandwich filled with raspberry-peach ice cream for the fruit-lover, fudge brownies filled with coconut milk-chocolate ice cream for the chocoholic, and ginger-oatmeal cookies sandwiched around blackberry-lemon swirl frozen custard for the zany wild card in your life. She also gets whimsical with her interpretation of a Choco Taco (pictured), which you can feel good about eating because every purchase sends a packet of food to a child in need as part of the This Bar Saves Lives campaign. So do the right thing and eat the Neapolitan ice cream taco, made with a chocolate-dipped Madagascar vanilla-almond-honey shell, and strawberry-rhubarb-cream cheese ice cream.

bake (2246 W. North Ave.)

Americana-centric Bucktown bakeshop bake is in the process of rolling out ice cream sandwiches. Jennifer Estrella features one flavor per day, such as dulce de leche ice cream betwixt chocolate chip ice cream. But the real killer is the ice cream-stuffed cupcakes, aka ice cream cupcake sandwiches, with flavors such as peanut butter ice cream-stuffed chocolate cupcakes with chocolate frosting, because everyone needs this in their lives.
