Dine on Neo Japanese cuisine while taking in a stunning view of the Chicago River and Michigan Avenue Bridge at Rebar, located on the mezzanine level of the Trump International Hotel & Tower Chicago. The chic bar offers an ever-evolving menu of Neo Japanese fare, created in collaboration with Chef Kazuhiko Wakimoto, who is known for perfecting the art of making sushi.
Sushi
The sushi at Rebar is artfully crafted, using only the highest-quality ingredients. For a starter, try the truffled tuna tataki, made with bluefin tuna, truffle ponzo, and spicy mayo. Maki mono options include the Rebar roll, filled with a snow crab mix, unagi, and avocado. There’s also nigiri, such as the hamachi (yellowtail) and ikura (salmon roe). Entrees include miso black cod and pan-seared Hokkaido scallops. The Japanese-inspired menu is available seven days a week from 5 p.m. – 10 p.m. daily, and 5 p.m. – 12 a.m. on Fridays and Saturdays.
Cocktails
Pair your sushi with a creative craft cocktail. The Saketini combines sake with Ketel One Botanical vodka, cucumber, club soda, and mint. The Kyoto Penicillin is a mix of Kikori Japanese whiskey, lemon juice, honey, and ginger. Rebar also offers an extensive wine, beer, and small-batch spirits list that’s thoughtfully curated, with a spotlight on leading trends.
On Friday and Saturday evenings, from 9 p.m. – 1 a.m., Rebar turns up the volume with live DJs and bottle service.
