We opened in Chicago’s West Loop neighborhood in August 2013. We are Chicago's first and only distillery with a cocktail bar! Celebrating the science of making spirits, the distillery takes its name from carbon and hydrogen, the fundamental compounds in alcohol, and at the same time, pays tribute to Chicago’s local community. Our signature spirits include: Vodka, London Dry Gin, Key Gin, Limoncello and Bourbon.
Founded by spirits enthusiasts Tremaine Atkinson and Mark Lucas, CH Distillery is a local grain-to-bottle operation, producing spirits from Illinois wheat and rye sourced from Kane County, Illinois. The distillery takes spirit-driven cocktails to a new level, allowing food and beverage director Krissy Schutte to custom-create liquors to build drinks around. We infuse our own spirits, as well as hand-craft our own juices and syrups used in the cocktails.
Crafted with the intention of pairing the food with spirits and cocktails, the menu by executive chef JP Doiron (Avec, Bavette’s Bar & Boeuf) showcases playful, yet authentic Eastern European-inspired bar snacks. Influenced by the industrial feel of the distillery, local architects Sullivan, Goulette & Wilson present a modern, cutting-edge design concept pairing a variety of different textures and materials such as concrete with reclaimed wood.
Opening hours of operation are 5pm-11pm Tuesday through Thursday, 5pm-12am Friday and Saturday, and closed Sunday and Monday.
