Trending in Chicago: Bacon

The bacon craze in Chicago is catching, and it seems to be affecting everyone from top-tier chefs to experimental mixologists. Even though bacon has always been great, here's a glimpse into this month's trend, one that we are pretty hyped about.

BACON BARS

Burke's Bacon Bar is a bacon-themed mini-sandwich shop located alongside David Burke's Primehouse in the James Hotel. All "handwiches" arte made with one of four types of bcon. Dessert centers on sweets with bacon, such as chocolate chip cookies with bacon and peanut brittle.

Paddy Long's is a beer and bacon bar that features 18 beers on tap and specializes in all kind of bacons. (1028 W Diversey Pkwy)

Beer and Bacon Tasting: Taste 5 cuts of bacon with five beers to give you the ultimate beer and bacon experience. The beers change seasonally, and the cuts are always delicious.

County BBQ is led by David Morton and Chef Michael Kornick, and is one of the first chef-driven barbeque concepts to hit the Windy City by Chicago-based DMK Restaurants. ( 1352 W Taylor St)

Bacon lovers will enjoy The Bacon Bar, which showcases items such as slices of slow-cooked smoked bacon, B.L.T. Sliders and Bacon-Deviled Eggs.

BACON COCKTAILS

Bacon Bloody Mary at Uncommon Ground: General Manager and Master Mixologist Nick Luedde gives this classic brunch drink a meaty makeover with hickory-smoked bacon. Luedde infuses bacon straight into vodka, giving the liquor a hearty, smoked flavor and aroma. (3800 N Clark St, and 1401 W Devon Ave)

Mixologist Mike Ryan has created both the Swine & Thine bacon/rum cocktail (Zacapa, bacon syrup, crème de cacao and chocolate bitters) and Tea and Sympathy (bacon washed plantation rum, earl grey and balsamic shrub and bacon-lemon flambé) for Baconfest. He is the Sable Kitchen & Bar Mixologist and continues to create bacon-infused cocktails.

"What's Shakin' Bacon" is a specialty cocktail created at Wicker Park Tavern that gets drunk about as fast as it can be crafted.

FESTIVALS

Baconfest Chicago is an annual festival that comes to Chicago to feature the hottest chefs from the finest local restaurants prepare and serve small plates starring bacon, while the best mixologists and brewers quench thirst with refreshing bacon-based and bacon-inspired cocktails and brews.

Beer & Bacon Fest - Chocolate covered bacon. Candied bacon. Chicken fried bacon. Bacon popcorn. This annual Uptown festival is put on by restaurant and bar Fat Cat and takes place in April. Taste over 20 different beers and bacon-themed treats at the fourth annual festival. Featured foods include chorizo stuffed dates wrapped in bacon, candied bacon, cheesy bacon popcorn and chocolate bourbon bacon cake. (4840 N Broadway Ave)
